Holiday Recipes from Joan Minnis

Skillet Candy Cookies

1cup butter

1.5 c sugar

2 cups finely chopped dates

2 T milk

1 tsp salt

2 eggs, well beaten

4 cups Rice Krispies

½ cup nuts

1 tsp vanilla

chopped coconut

Melt butter in fry pan over medium heat. Stir sugar into melted butter until dissolved. Add dates and continue cooking, stirring constantly until mixture leaves side of pan. Stir in milk, salt, eggs and cook for 2 minutes. Add Krispies, nuts, and vanilla. When mixture has cooled slightly, form into small balls and roll in chopped coconut. Place on waxed paper and refrigerate to keep cold. Makes 3 dozen.

Russian Tea Cookies (Recipe from Mom!)

1 cup butter

½ cup powdered sugar

¼ tsp salt

2 ¼ cups flour

1 tsp vanilla

¾ cup nuts

Cream butter and sugar. Sift salt into flour and add to creamed mixture. Add vanilla and nuts. Mix well. Chill dough for one hour. Form into small balls (about the size of a walnut) and place on lightly greased cookie sheet about 2 ½ inches apart. Bake 15-17 minutes at 400. WATCH! While warm, roll in powdered sugar. Allow to cool and roll again.
